Ingredients
  • 1 pound ground sausage
  • 1 (10 ounce) package frozen spinach, thawed and squeezed dry
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 10 eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, brown the sausage over medium heat. Drain off any excess fat.
  3. Add the spinach, onion, green bell pepper, and red bell pepper to the skillet and cook until the vegetables are softened.
  4. In a large bowl, whisk together the eggs, cheddar cheese, mozzarella cheese, salt, and pepper.
  5. Stir in the sausage and vegetable mixture.
  6. Pour the mixture into a greased 9x13 inch baking dish.
