Ingredients

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, salt, and pepper.
  3. Spread potatoes on a baking sheet and roast for 20 minutes, or until golden brown and crispy.
  4. While potatoes are roasting, combine avocado, red onion, cilantro, lime juice, and olive oil in a large bowl.
