Ingredients
  • 4 cups low-sodium chicken broth
  • 1 cup shredded cooked chicken breast
  • 2 eggs
  • 1/4 cup fresh lemon juice
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste
Instructions
  1. In a large pot, bring the chicken broth to a simmer.
  2. Add the shredded chicken and cook for 5 minutes.
  3. In a medium bowl, whisk together the eggs and lemon juice until frothy.
  4. Slowly pour 1 cup of the hot broth into the egg mixture, whisking constantly to prevent curdling.
  5. Pour the egg mixture back into the pot with the chicken broth, stirring constantly.
  6. Cook for an additional 5 minutes, stirring occasionally.
  7. Stir in the chopped dill and season with salt and pepper.
  8. Remove from heat and serve hot.
