  • 1 cup almond flour
  • 1/2 cup powdered erythritol
  • 1/4 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon baking powder
  • Pinch of salt
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Line a madeleine pan with parchment paper.
  3. In a medium bowl, whisk together the almond flour, powdered erythritol, baking powder, and salt.
  4. In a separate bowl, beat together the butter and eggs until light and fluffy.
  5. Stir in the vanilla extract and almond extract.
  6. Add the dry ingredients to the wet ingredients and mix until just combined.
