Ingredients
1 block firm tofu, pressed
1 package (8 ounces) shirataki noodles
1 cup broccoli florets
1/2 cup shredded carrots
1/2 cup shredded red cabbage
1/4 cup chopped green onions
1/4 cup chopped cilantro
Instructions
Preheat oven to 400°F (200°C).
Cut tofu into 1-inch cubes and toss with 1 tablespoon of soy sauce.
Spread tofu on a baking sheet and bake for 20 minutes, or until golden brown and crispy.
While the tofu is baking, cook the shirataki noodles according to package directions.
In a large bowl, combine the noodles, broccoli, carrots, cabbage, green onions, and cilantro.
To make the spicy peanut sauce, whisk together 1/4 cup peanut butter, 1/4 cup water, 1 tablespoon soy sauce, 1 tablespoon rice vinegar, and 1/2 teaspoon Sriracha sauce.
Pour the spicy peanut sauce over the noodle mixture and toss to coat.
Top with crispy tofu and serve.
