Ingredients
  • 1 ripe avocado, pitted and peeled

  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil, melted (for coating)
Instructions
  1. In a food processor, combine avocado, cocoa powder, maple syrup, melted coconut oil, and vanilla extract until smooth.
  2. Roll the mixture into 12 equal-sized balls.
  3. Freeze the truffles for at least 30 minutes.
  4. In a double boiler or microwave-safe bowl, melt the dark chocolate chips and remaining melted coconut oil together until smooth.
  5. Dip each truffle into the melted chocolate and place on a parchment paper-lined baking sheet.
  6. Refrigerate for at least 1 hour, or until the chocolate has set.
