Ingredients
4 large eggs
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chopped cooked spinach
1/2 cup chopped cooked breakfast sausage
Instructions
Preheat oven to 350 degrees F (175 degrees C).
Grease a 12-cup muffin tin.
In a large bowl, whisk together the eggs, heavy cream, Parmesan cheese, parsley, salt and pepper.
Stir in the spinach and sausage.
Fill each muffin cup about 3/4 full.
