Ingredients
  • 1 cup quinoa
  • 1 tablespoon olive oil
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 zucchini, cut into 1-inch pieces
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with olive oil, salt, and pepper.
  3. Spread vegetables on a baking sheet and roast for 20-25 minutes, or until tender.
  4. While vegetables are roasting, cook quinoa according to package directions.
  5. Fluff quinoa with a fork and let cool slightly.
  6. In a small bowl, whisk together olive oil, lemon juice, lime juice, honey, salt, and pepper.
  7. Pour vinaigrette over quinoa and vegetables and toss to coat.
  8. Garnish with cilantro and parsley.
