Ingredients

  • 1 (14-ounce) package extra-firm tofu, drained and crumbled
  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup nutritional yeast
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion, green bell pepper, and red bell pepper and cook until softened, about 5 minutes.
  3. Add the tofu and cook until browned, about 5 minutes more.
  4. Add the spinach, nutritional yeast, salt, and black pepper and cook until the spinach is wilted, about 2 minutes more.
