Roasted Butternut Squash and Apple Soup

Ingredients
  • 1 medium butternut squash, peeled and cubed
  • 1 medium apple, peeled and cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups chicken broth
Instructions
  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the butternut squash, apples, onions, garlic, olive oil, cinnamon, nutmeg, salt, and pepper.
  3. Toss to coat.
  4. Spread the vegetables on a baking sheet.
  5. Roast for 25-30 minutes, or until the vegetables are tender and browned.
