Ingredients
1 lb boneless, skinless chicken breasts
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 cups chicken broth
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Place chicken breasts on a baking sheet and drizzle with olive oil. Season with salt and pepper.
Roast in preheated oven for 20-25 minutes, or until cooked through.
Remove chicken from oven and let cool slightly.
