Ingredients
  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place chicken breasts on a baking sheet and drizzle with olive oil. Season with salt and pepper.
  3. Roast in preheated oven for 20-25 minutes, or until cooked through.
  4. Remove chicken from oven and let cool slightly.
  5. Meanwhile, heat olive oil in a large pot over medium heat.
  6. Add onion, carrots, and celery and cook until softened.
  7. Add chicken broth and bring to a boil.
  8. Reduce heat to low and simmer for 15 minutes.
