These creamy dill cucumber cups are the perfect summer appetizer. They're light and refreshing, with a creamy dill filling that's bursting with flavor. They're also easy to make, and can be assembled in just a few minutes.
I first came up with this recipe a few years ago when I was looking for a healthy and refreshing summer appetizer. I had some cucumbers in the fridge, and I wanted to do something different with them. I started experimenting with different fillings, and I finally came up with this creamy dill filling. It's the perfect balance of sweet and sour, and it's so refreshing. I've been making these cucumber cups ever since, and they're always a hit with my friends and family.

Ingredients
12 small cucumbers
½ cup dairy-free sour cream
¼ cup mayonnaise
2 tablespoons finely chopped fresh dill
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon freshly ground black pepper
24 fresh dill sprigs, for garnish
Instructions
Cut the cucumbers into 1-inch rounds.
Using a melon baller or a spoon, remove the seeds and some of the flesh from the center of each round, creating a small well.
In a medium bowl, combine the sour cream, mayonnaise, dill, garlic powder, salt, and pepper.
Spoon the filling into the wells of the cucumber cups.
Garnish with fresh dill sprigs and serve.
Why It Works
The cucumbers provide a refreshing and crisp base for the creamy dill filling.
The creamy dill filling is made with dairy-free sour cream and mayonnaise, which makes it light and fluffy.
The fresh dill adds a bright and herbaceous flavor to the filling.
The garlic powder adds a subtle garlicky flavor to the filling.
The salt and pepper help to balance out the flavors in the filling.
The fresh dill sprigs add a garnish and a touch of extra flavor.
