Ingredients
  • 1 cup kamut khorasan wheat berries
  • 2 medium beets, peeled and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled goat cheese
  • 2 tablespoons chopped fresh parsley
Instructions
  1. Rinse the wheat berries under cold water and place them in a medium saucepan.
  2. Cover the wheat berries with 2 cups of water and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 45 minutes, or until the wheat berries are tender and have absorbed most of the water.
  4. While the wheat berries are cooking, preheat the oven to 400°F (200°C).
  5. Toss the beets with olive oil, thyme, salt, and pepper.
  6. Spread the beets on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
  7. Allow the beets to cool slightly.
  8. Combine the cooked wheat berries, roasted beets, goat cheese, and parsley in a large bowl.
  9. Toss to combine.
