Ingredients
  • 1 cup millet, rinsed and drained

Instructions
  1. Cook the millet according to package directions.
  2. While the millet is cooking, roast the sweet potatoes on a baking sheet at 400 degrees F for 20-25 minutes, or until tender and browned.
  3. Combine the cooked millet, roasted sweet potatoes, pomegranate seeds, red onion, cilantro, mint, olive oil, and lime juice in a large bowl.
  4. Stir until combined.
  5. Serve immediately or chill for later.
