Cauliflower Pizza with Roasted Chicken and Peppers

Ingredients
  • 1 head of cauliflower, grated
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • 1 pound boneless, skinless chicken breasts, roasted and shredded
  • 1 bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1 cup shredded mozzarella cheese
Instructions
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. In a large bowl, combine the cauliflower, almond flour, Parmesan cheese, egg, garlic powder, and oregano.
  3. Press the mixture into a 12-inch pizza pan.
  4. Bake for 20 minutes, or until the crust is golden brown.
  5. Remove from oven and top with the chicken, bell pepper, onion, and mozzarella cheese.
  6. Bake for 10 minutes more, or until the cheese is melted and bubbly.
  7. Let cool for a few minutes before slicing and serving.
