Refreshing Vietnamese Bun Rieu

Ingredients
- 1 cup uncooked vermicelli rice noodles
- 2 cups vegetable broth
- 1 cup cooked crab meat
- 1 cup cooked shrimp
- 1 cup cooked pork
- 1/2 cup mint leaves
- 1/2 cup cilantro leaves
- 1/4 cup green onions, sliced
Instructions
- Soak rice noodles in hot water until softened, about 5 minutes.
- Drain noodles and rinse with cold water.
- Bring vegetable broth to a boil in a large pot.
- Add noodles, crab meat, shrimp, pork, mint, cilantro, and green onions to the pot.
- Reduce heat and simmer for 5 minutes, or until noodles are cooked through.
- Serve immediately.
