Ingredients
14 oz extra firm tofu, pressed and sliced
2 tbsp coconut oil
1 cup broccoli florets
1 cup sugar snap peas
1 cup red bell pepper, sliced
½ cup chopped green onions
½ cup Thai chili paste
3 tbsp soy sauce
2 tbsp brown sugar
1 tbsp lime juice
Instructions
Heat coconut oil in a large skillet over medium heat.
Add tofu and cook until golden brown on all sides.
Add broccoli, sugar snap peas and bell pepper.
Cook until the vegetables are slightly tender, about 3-4 minutes.
Stir in green onions, chili paste, soy sauce, brown sugar and lime juice.
Cook for an additional 1-2 minutes, or until the sauce has thickened.
Serve over rice or noodles, if desired.
