Ingredients
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (16 ounce) package zucchini noodles
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup pesto sauce
Instructions
  1. Season the chicken breasts with oregano, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes per side, or until cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. Add the zucchini noodles to the skillet and cook for 2-3 minutes, or until softened.
  5. Add the chicken broth and heavy cream to the skillet and bring to a simmer.
  6. Stir in the pesto sauce and cook for 1-2 minutes, or until heated through.
  7. Return the chicken breasts to the skillet and cook for an additional 2-3 minutes, or until warmed through.
  8. Serve the soup hot.
