Ketogenic Shepherd's Pie

We've swapped out the potatoes for riced cauliflower, which is a great low-carb alternative that still gives you that creamy texture. And because we're using ground beef instead of lamb, this dish is a bit more budget-friendly too.

Ingredients
  • 1 pound ground beef
  • 1/2 onion, chopped
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 cup beef broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 head of cauliflower, riced
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown the ground beef over medium heat. Drain off any excess fat.
  3. Add the onion, bell peppers, and garlic to the skillet and cook until softened.
  4. Stir in the tomatoes, beef broth, oregano, salt, and pepper. Bring to a simmer and cook until the sauce has thickened.
  5. Transfer the meat mixture to a 9x13 inch baking dish.
  6. In a large bowl, combine the cauliflower rice with 1/4 cup of the meat sauce. Season with salt and pepper to taste.
  7. Spread the cauliflower mixture over the meat mixture.
  8. Bake for 20-25 minutes, or until the cauliflower is tender and the sauce is bubbling.
