Refreshing Lebanese Tabbouleh

Ingredients
  • 1 cup bulgur wheat
  • 2 cups boiling water
  • 2 cups finely chopped fresh parsley
  • 1 cup finely chopped fresh mint
  • 1 cup finely chopped fresh tomatoes
  • 1/2 cup finely chopped fresh onion
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
Instructions
  1. Rinse bulgur wheat in a fine-mesh sieve.
  2. Combine bulgur wheat and boiling water in a bowl and let stand for 15 minutes or until bulgur wheat is tender.
  3. Fluff bulgur wheat with a fork and transfer to a large bowl.
  4. Add parsley, mint, tomatoes, onion, olive oil, lemon juice, salt and pepper to the bulgur wheat and toss to combine.
  5. Taste and adjust seasonings as needed.
  6. Serve immediately or refrigerate for later.
