Ketogenic Beef and Broccoli Soup

Ingredients
- 1 pound ground beef
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- 2 cups beef broth
- 1 cup water
- 1/2 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh broccoli
Instructions
- In a large pot over medium heat, brown the ground beef. Drain off any excess fat.
- Add the onion, green bell pepper, and red bell pepper to the pot and cook until softened.
- Stir in the beef broth, water, heavy cream, and shredded cheddar cheese. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in the chopped broccoli and cook for 5 minutes more, or until the broccoli is tender.
