Zucchini Noodle Stir-fry with Chicken and Broccoli
This zucchini noodle stir-fry is a quick and easy way to get your veggies in. Ingredients
  • 1 pound zucchini, spiralized
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 head of broccoli, cut into florets
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1 tablespoon sesame oil
Instructions
  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the chicken and cook until browned on all sides.
  3. Add the zucchini noodles, broccoli, onion, and red bell pepper to the skillet.
  4. Cook, stirring occasionally, until the vegetables are tender.
  5. In a small bowl, whisk together the soy sauce and water.
  6. Add the sauce to the skillet and cook for 1-2 minutes, or until the sauce has thickened.
