Lima beans, also known as butter beans, have been a staple food in many cultures for centuries. They are believed to have originated in Peru, where they were domesticated by the Incas. Lima beans were introduced to Europe by Spanish explorers in the 16th century and quickly became popular throughout the continent. In the United States, lima beans were a common crop in the South, but their popularity declined in the 20th century. However, in recent years, there has been a resurgence of interest in lima beans, as people rediscover their nutritional value and versatility.
