Roasted Cauliflower and Broccoli Salad
This roasted cauliflower and broccoli salad is a simple and flavorful side dish that is perfect for any occasion. The cauliflower and broccoli are roasted until tender and slightly charred, and then tossed with a simple dressing made with olive oil, lemon juice, oregano, salt, and pepper. The result is a salad that is both healthy and delicious, and can be served warm or cold.
This salad was inspired by a dish I had at a restaurant in the East Village. I was so impressed by the flavor of the roasted vegetables and the simplicity of the dressing that I decided to try and recreate it at home. After a few tries, I came up with this recipe, which I think is even better than the original. The key to this salad is to roast the vegetables until they are tender and slightly charred. This gives them a wonderful depth of flavor that is impossible to achieve if they are simply boiled or steamed. The dressing is also very important, and the combination of olive oil, lemon juice, oregano, salt, and pepper is perfect for enhancing the flavor of the vegetables. I like to serve this salad warm, but it can also be served cold. It is a great side dish for any occasion, and it is also a healthy and delicious way to get your vegetables.
