Baked Cod with Creamy Lemon Caper Sauce and Roasted Vegetables
This baked cod with creamy lemon caper sauce and roasted vegetables is a light and flavorful dish that's perfect for a weeknight meal. The cod is flaky and tender, the sauce is rich and creamy, and the roasted vegetables add a touch of sweetness and crunch. It's a simple dish to make, but it's packed with flavor.
This recipe was inspired by a dish I had at a restaurant in New York City. I was so impressed by the combination of flavors and textures that I decided to try and recreate it at home. After a few tries, I finally came up with a recipe that I was happy with. It's not an exact copy of the dish I had at the restaurant, but it's pretty close. And it's just as delicious.

Why It Works
  • The cod is cooked at a high temperature, which helps to create a flaky and tender texture.
  • The creamy lemon caper sauce is made with a combination of lemon juice, capers, and heavy cream. This gives the sauce a rich and creamy flavor with a touch of acidity.
  • The roasted vegetables add a touch of sweetness and crunch to the dish.
  • The combination of flavors and textures in this dish is what makes it so special.
