Ingredients
1 pound salmon fillet
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped avocado
1/2 cup chopped mango
1/4 cup chopped red onion
1 tablespoon chopped cilantro
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Line a baking sheet with parchment paper.
Place the salmon fillet on the prepared baking sheet.
Drizzle with olive oil and season with salt and pepper.
Roast in preheated oven for 12-15 minutes, or until cooked through.
While the salmon is cooking, prepare the salsa by combining the avocado, mango, red onion, and cilantro in a bowl.
Serve the roasted salmon with the avocado and mango salsa on top.
