Roasted Salmon with Avocado and Mango Salsa

This recipe was inspired by a trip to the Caribbean, where I had the pleasure of tasting some of the freshest and most delicious seafood I've ever eaten. The salmon was cooked to perfection, with a crispy skin and a moist and flavorful interior. The avocado and mango salsa was the perfect accompaniment, adding a bright and tangy flavor to the fish. Ingredients
  • 1 pound salmon fillet
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped avocado
  • 1/2 cup chopped mango
  • 1/4 cup chopped red onion
  • 1 tablespoon chopped cilantro
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Line a baking sheet with parchment paper.
  3. Place the salmon fillet on the prepared baking sheet.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Roast in preheated oven for 12-15 minutes, or until cooked through.
  6. While the salmon is cooking, prepare the salsa by combining the avocado, mango, red onion, and cilantro in a bowl.
  7. Serve the roasted salmon with the avocado and mango salsa on top.
