Chicken and Vegetable Stir-Fry
A quick and easy stir-fry that is perfect for a low-carb meal.

Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup sliced bell peppers
- 1/2 cup chopped onion
- 1/4 cup soy sauce
- 1/4 cup water
- 1 tablespoon cornstarch
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken and cook until browned on all sides.
- Add the broccoli, carrots, bell peppers, and onion to the skillet and cook until tender.
- In a small bowl, whisk together the soy sauce, water, and cornstarch.
- Add the sauce to the skillet and bring to a boil.
- Reduce heat and simmer until the sauce has thickened.
- Season with salt and pepper to taste.
