Ingredients
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers
  • 1/2 cup chopped onion
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
Instructions
  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken and cook until browned on all sides.
  3. Add the broccoli, carrots, bell peppers, and onion to the skillet and cook until tender.
  4. In a small bowl, whisk together the soy sauce, water, and cornstarch.
  5. Add the sauce to the skillet and bring to a boil.
  6. Reduce heat and simmer until the sauce has thickened.
  7. Season with salt and pepper to taste.
