A simple and refreshing grilled peach and arugula salad, perfect for summer. The sweet and juicy peaches are grilled to perfection and tossed with arugula, walnuts, feta cheese, and a light balsamic vinaigrette.
This salad was inspired by a trip to the farmers market, where I found the most amazing peaches. I knew I had to do something special with them, so I decided to grill them and toss them with some of my favorite salad ingredients. The result was this delicious and flavorful salad that is perfect for summer gatherings.
Prep time: 15 | Cook time: 6 | Serves: 4
Ingredients
2 peaches, halved and pitted
4 cups arugula
1/4 cup chopped walnuts
1/4 cup crumbled feta cheese
2 tbsp balsamic vinegar
1 tbsp olive oil
Salt and pepper to taste
Instructions
Preheat grill to medium heat.
Grill peach halves for 2-3 minutes on each side until grill marks appear.
Let peaches cool, then slice into wedges.
In a large bowl, combine arugula, walnuts, feta cheese, and grilled peaches.
In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.
Drizzle dressing over salad and toss to combine.
Serve immediately and enjoy!
Why It Works
Grilling the peaches brings out their natural sweetness and caramelizes the edges, giving them a slightly smoky flavor.
The arugula adds a peppery bite to the salad, while the walnuts add a crunchy texture.
The feta cheese adds a salty and tangy flavor to the salad.
The balsamic vinaigrette is a light and refreshing dressing that complements the flavors of the salad.
