Loaded Cauliflower Soup with Bacon and Cheese

Ingredients
- 1 head of cauliflower, chopped
- 4 strips of bacon, chopped
- 1 onion, chopped
- 4 cups of chicken broth
- 1/2 cup of heavy cream
- 1/2 cup of shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot or Dutch oven, cook the bacon over medium heat until crispy.
- Remove the bacon from the pot and set aside.
- Add the onion to the pot and cook until softened.
- Add the cauliflower to the pot and cook for 5 minutes, or until softened.
- Add the chicken broth to the pot and bring to a boil.
- Reduce the heat and simmer for 15 minutes, or until the cauliflower is tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream, cheddar cheese, salt, and pepper.
