Ingredients
  • 1 head of cauliflower, chopped
  • 4 strips of bacon, chopped
  • 1 onion, chopped
  • 4 cups of chicken broth
  • 1/2 cup of heavy cream
  • 1/2 cup of shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)
Instructions
  1. In a large pot or Dutch oven, cook the bacon over medium heat until crispy.
  2. Remove the bacon from the pot and set aside.
  3. Add the onion to the pot and cook until softened.
  4. Add the cauliflower to the pot and cook for 5 minutes, or until softened.
  5. Add the chicken broth to the pot and bring to a boil.
  6. Reduce the heat and simmer for 15 minutes, or until the cauliflower is tender.
  7. Use an immersion blender to puree the soup until smooth.
  8. Stir in the heavy cream, cheddar cheese, salt, and pepper.
