Ketogenic Chicken Alfredo
This ketogenic take on the classic chicken Alfredo is a creamy, cheesy dream that won't throw you out of ketosis. The key is using cauliflower to create a creamy, low-carb Alfredo sauce. The result is a dish that's satisfying, indulgent, and still keto-friendly.
Alfredo sauce is a classic for a reason: it's creamy, cheesy, and delicious. But it's also not exactly keto-friendly. Traditional Alfredo sauce is made with heavy cream and Parmesan cheese, both of which are high in carbs. That's where this recipe comes in. We've swapped out the heavy cream for cauliflower, which is a low-carb vegetable that's packed with nutrients. We've also reduced the amount of Parmesan cheese and added garlic powder for extra flavor. The result is a ketogenic Alfredo sauce that's just as creamy and cheesy as the original, but without all the carbs.

  • 1 pound boneless, skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium head of cauliflower, chopped
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add chicken breasts to the skillet and cook for 3-4 minutes per side, or until golden brown.
  5. Transfer chicken breasts to a baking dish and bake for 15-20 minutes, or until cooked through.
  6. While the chicken is cooking, make the Alfredo sauce.
  7. Add cauliflower to the skillet and cook over medium heat for 5-7 minutes, or until softened.
  8. Add heavy cream, Parmesan cheese, and garlic powder to the skillet and cook for 2-3 minutes, or until sauce is thickened.
Why It Works
  • Cauliflower is a great substitute for heavy cream in Alfredo sauce because it's low in carbs and has a neutral flavor. When cooked, cauliflower releases moisture, which helps to create a creamy sauce.
  • Using less Parmesan cheese helps to reduce the carb count of the sauce without sacrificing flavor.
  • Garlic powder adds a nice depth of flavor to the sauce.
