Spicy Moroccan Chickpea Tagine

Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes
Instructions
- Heat olive oil in a large saucepan over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Stir in cumin, coriander, turmeric, and cayenne pepper.
- Add chickpeas and tomatoes.
- Bring to a boil, then reduce heat and simmer for 15 minutes or until heated through.
- Serve over rice or quinoa.
