Ingredients
  • 1 pound Italian sausage
  • 1 onion, chopped

  • 1 (10 ounce) package frozen spinach, thawed and squeezed dry
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste
Instructions
  1. Brown the sausage in a large pot over medium heat. Remove the sausage from the pot and set aside.
  2. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Add the mushrooms to the pot and cook until softened and browned, about 10 minutes.
  4. Add the spinach, chicken broth, heavy cream, and Parmesan cheese to the pot. Bring to a simmer and cook for 15 minutes, or until the soup has thickened.
