These pancakes were born out of a desire to create a protein-rich breakfast that was also gluten-free and low-carb. After some experimentation, I came up with this recipe for coconut flour protein pancakes that are light, fluffy, and packed with protein. They're perfect for a quick and healthy breakfast or snack.

Ingredients
1/2 cup coconut flour
1 scoop whey protein powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 egg
1/2 cup unsweetened almond milk
Instructions
In a large bowl, whisk together the coconut flour, whey protein powder, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, whisk together the egg and almond milk.
Add the wet ingredients to the dry ingredients and whisk until well combined.
Heat a griddle or frying pan over medium heat and grease with coconut oil or butter.
Pour 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2-3 minutes per side, or until golden brown.
Serve immediately with your favorite toppings, such as sugar-free syrup.
