Ingredients
  • 1/2 cup coconut flour
  • 1 scoop whey protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup unsweetened almond milk
Instructions
  1. In a large bowl, whisk together the coconut flour, whey protein powder, baking powder, baking soda, cinnamon, and salt.
  2. In a separate bowl, whisk together the egg and almond milk.
  3. Add the wet ingredients to the dry ingredients and whisk until well combined.
  4. Heat a griddle or frying pan over medium heat and grease with coconut oil or butter.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown.
  7. Serve immediately with your favorite toppings, such as sugar-free syrup.
