Citrus Shrimp and Avocado Salad

Ingredients
  • 1 lb shrimp, peeled and deveined
  • 2 avocados, diced

  • Salt and pepper to taste
  • Mixed greens for serving
Instructions
  1. In a large bowl, combine shrimp, avocados, grapefruit segments, orange segments, and cilantro.
  2. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve the salad over a bed of mixed greens.
