Ingredients
2 tablespoons olive oil
2 large onions, thinly sliced
4 cups kale, stems removed and chopped
8 slices whole grain bread, cubed
6 large eggs
1 1/2 cups unsweetened almond milk
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated parmesan cheese
Instructions
In a skillet, heat olive oil over medium heat and sauté the onions until caramelized, about 20 minutes.
Add the chopped kale to the skillet and cook until wilted, about 5 minutes.
In a greased baking dish, layer the bread cubes, caramelized onions, and kale.
In a bowl, whisk together eggs, almond milk, garlic powder, salt, and pepper. Pour over the bread mixture.
Sprinkle grated parmesan cheese on top.
Cover and refrigerate overnight or for at least 2 hours.
Preheat oven to 350°F (175°C) and bake the strata for 45-50 minutes until set and golden brown.
