Ingredients
1 cup dried mung beans, rinsed and picked over
1 cup quinoa, rinsed and drained
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a medium saucepan, combine the mung beans, quinoa, and water. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the beans and quinoa are tender.
Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened.
Add the garlic, cumin, coriander, salt, and pepper to the skillet and cook for 1 minute more.
Add the mung bean and quinoa mixture to the skillet and cook for 5 minutes, or until heated through.
