Keto Enchiladas with Chicken
Our take on the classic enchilada, a staple of Tex-Mex cuisine, featuring flavorful chicken and a rich tomato sauce. These enchiladas are made with low-carb tortillas, making them a healthier option that won't break the bank.
The enchilada is a Mesoamerican dish consisting of a corn tortilla filled with a variety of ingredients, such as cheese, beans, or meat, and covered with a chili sauce. The origins of the enchilada can be traced back to the pre-Columbian era, when the Maya and Aztec people made similar dishes. The enchilada was introduced to Europe by Spanish conquistadors in the 16th century, and it quickly became a popular dish in Spain and Portugal. From there, the enchilada was brought to the Americas by Spanish colonists, and it has since become a staple of Tex-Mex cuisine. Our recipe takes the classic enchilada and gives it a modern twist with the use of low-carb tortillas, making it a healthier and more flavorful option.
