Ingredients
  • 2 tablespoons olive oil
  • 1 head of garlic, cloves separated and peeled
  • 1 large onion, chopped
  • 2 celery sticks, chopped
  • 2 carrots, chopped
  • 1 (28-ounce) can of diced tomatoes
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss garlic cloves with 1 tablespoon of olive oil and spread on a baking sheet.
  3. Roast garlic for 20 minutes, or until golden brown.
  4. Heat remaining 1 tablespoon of olive oil in a large pot over medium heat.
  5. Add onion, celery, and carrots and cook until softened, about 5 minutes.
  6. Add tomatoes and chicken broth and bring to a simmer.
  7. Reduce heat to low and simmer for 30 minutes.
  8. Add roasted garlic, heavy cream, and Parmesan cheese. Season with salt and pepper to taste.
