Creamy Tuscan Chicken with Sun-Dried Tomatoes and Mushrooms
This is a Tuscan-inspired chicken dish that is made with sun-dried tomatoes, mushrooms, and a creamy Parmesan sauce. It's a flavorful and easy-to-make meal that's perfect for a weeknight dinner.
The idea for this recipe came to me one night when I was flipping through a cookbook and saw a picture of a Tuscan-inspired chicken dish. I was immediately drawn to the combination of sun-dried tomatoes, mushrooms, and creamy Parmesan sauce. I decided to try making my own version of the dish, and it turned out to be even better than I had imagined. This recipe is a great way to use up leftover chicken. I like to use boneless, skinless chicken thighs, but you could also use breasts. The chicken is seasoned with salt and pepper, then cooked in a skillet until golden brown. The sun-dried tomatoes and mushrooms are added to the skillet and cooked until softened. Finally, the heavy cream and Parmesan cheese are added and simmered until the sauce has thickened. This dish is so flavorful and easy to make. It's a perfect meal for a weeknight dinner or a weekend lunch. Serve it with a side of pasta or rice.
