Refreshing Asparagus and Radish Salad

Ingredients
  • 1 bunch asparagus, trimmed
  • 1 bunch radishes, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
Instructions
  1. Bring a large pot of salted water to a boil.
  2. Add the asparagus and cook for 2-3 minutes, or until tender-crisp.
  3. Remove the asparagus from the pot and plunge it into a bowl of ice water to stop the cooking process.
  4. Drain the asparagus and pat it dry.
  5. In a large bowl, combine the asparagus, radishes, feta cheese, parsley, mint, olive oil, and lemon juice.
  6. Season with salt and pepper to taste.
  7. Toss to combine.
  8. Serve immediately or chill for later.
