Coconut Turmeric Chia Seed Pudding
This low-maintenance recipe takes minutes to prepare before you slide it into the fridge. The next day, you'll be rewarded with a creamy, sweet, and slightly spicy treat that's equal parts breakfast, snack, and dessert.
My love for chia seed pudding started as many great things do: with a late-night internet rabbit hole. Back in the day, I was scouring the corners of Food Network's website, searching for a recipe that would satisfy my craving for something sweet without sacrificing my morning workout. Chia seed pudding seemed like the perfect solution: It's easy to make, packed with nutrients, and endlessly customizable. I started with the basics: chia seeds, almond milk, and honey. But over time, I've experimented with all sorts of different flavor combinations. This Coconut Turmeric Chia Seed Pudding is one of my favorites. It's creamy, sweet, and slightly spicy, thanks to the addition of turmeric powder. I like to top mine with shredded coconut and a drizzle of honey, but you can get creative with your toppings. The best thing about chia seed pudding is that it's so versatile. You can make it ahead of time and enjoy it for breakfast, lunch, or dinner. It's also a great way to use up leftover coconut milk. This pudding is also a good source of fiber and protein, making it a filling and satisfying snack.

Why It Works
  • Chia seeds are tiny powerhouses of nutrition. They're packed with fiber, protein, and omega-3 fatty acids.
  • The chia seeds absorb the coconut milk and expand, creating a creamy, pudding-like texture.
  • Turmeric powder adds a slightly spicy and earthy flavor to the pudding.
  • The coconut and sweetener add a touch of sweetness and texture.
