Ingredients
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped

  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, cook the onion, garlic, bell peppers, zucchini, and eggplant over medium heat until softened.
  3. Stir in the black beans and corn.
  4. Season with salt and pepper to taste.
  5. Transfer the vegetable mixture to a 9x13 inch baking dish.
  6. In a medium bowl, combine the ricotta cheese, Parmesan cheese, and eggs.
  7. Spread the ricotta mixture over the vegetable mixture.
