Creamy Tuscan Chicken with Spinach and Sausage

  • 1 (10 ounce) can diced tomatoes with green chiles, undrained

Instructions
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned on both sides.
  3. Reduce heat to medium and add onion and garlic.
  4. Cook until onion is softened, about 5 minutes.
  5. Stir in black beans, corn, tomatoes, and green chiles.
  6. Bring to a simmer and cook until chicken is cooked through, about 10 minutes.
