Spicy Sausage and Vegetable Soup

Ingredients
  • 2 tablespoons olive oil
  • 1 pound spicy Italian sausage, casings removed
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 (15 ounce) can diced tomatoes (undrained)
  • 1 cup chopped red bell pepper
  • 1 cup chopped green bell pepper
  • 1 (15 ounce) can black beans (drained and rinsed)
Instructions
  1. In a large pot or Dutch oven over medium heat, heat the olive oil. Add the sausage and cook until browned, about 10 minutes. Break up the sausage into small pieces as it cooks.
  2. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in the chicken broth, tomatoes, red bell pepper, green bell pepper, and black beans. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the vegetables are tender.
  4. Season to taste with salt and pepper. Serve hot.
  5. Top with shredded cheese, sour cream, or chopped cilantro if desired.
