Keto Pizza with Capsicum and Spinach
Our quest for the Holy Grail of keto-friendly pizzas has led us through many iterations and detours, but we believe we may have finally found the answer. Our Keto Pizza with Capsicum and Spinach boasts a crispy, golden crust made from almond flour and Parmesan cheese, topped with gooey mozzarella, vibrant green capsicum, and earthy spinach. It's a symphony of flavors and textures that will satisfy your cravings without compromising your low-carb lifestyle.
The pursuit of a perfect keto pizza is a tale as old as the diet itself. Early attempts involved using fathead dough, a mixture of almond flour, mozzarella, and cream cheese, which while tasty, often resulted in a dense and rubbery crust. Other experiments with coconut flour and flaxseed meal yielded promising results but lacked the desired crispiness. It wasn't until we stumbled upon the combination of almond flour and Parmesan cheese that we finally achieved our goal. The Parmesan adds a nutty richness and helps create a crust that is both crispy on the outside and tender on the inside. Topped with classic pizza ingredients like mozzarella, capsicum, and spinach, this keto pizza is a game-changer for those looking to indulge in their favorite food without the guilt.

Why It Works
  • **Almond flour and Parmesan cheese:** This combination creates a crispy, golden crust that is both sturdy enough to hold toppings and tender enough to fold without breaking.
  • **Mozzarella cheese:** The gooey, melted mozzarella provides the essential flavor and texture of a classic pizza.
  • **Green capsicum and spinach:** These vibrant vegetables add color, freshness, and a touch of bitterness to balance the richness of the cheese.
  • **Baking the crust before adding toppings:** This step ensures that the crust is cooked through and crispy before it gets weighed down by toppings, preventing it from becoming soggy.
