Ingredients
  • 1 medium zucchini, grated
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat air fryer to 375 degrees F (190 degrees C).
  2. In a large bowl, combine all ingredients and mix well.
  3. Line a baking sheet with parchment paper and spoon 1-tablespoon portions of the mixture onto the prepared baking sheet. (You should get about 12-15 fritters.)
  4. Air fry for 10-12 minutes or until golden brown and cooked through.
  5. Serve warm.
