Ingredients
1 medium zucchini, grated
1/2 cup feta cheese, crumbled
1/4 cup almond flour
1/4 cup grated Parmesan cheese
2 eggs
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat air fryer to 375 degrees F (190 degrees C).
In a large bowl, combine all ingredients and mix well.
Line a baking sheet with parchment paper and spoon 1-tablespoon portions of the mixture onto the prepared baking sheet. (You should get about 12-15 fritters.)
Air fry for 10-12 minutes or until golden brown and cooked through.
