Breakfast egg rolls are a quick and easy way to get a healthy and satisfying meal on the table. They're made with a simple dough that's rolled out and filled with your favorite fillings. Then, they're cooked in an air fryer until golden brown and crispy.
The idea for breakfast egg rolls came to me one morning when I was trying to think of something quick and easy to make for breakfast. I had some leftover almond flour and coconut flour in my pantry, and I thought, "Why not try making egg rolls with them?" I'm so glad I did, because these egg rolls are delicious! They're crispy on the outside and fluffy on the inside, and they can be filled with whatever you like. I've tried them with eggs, cheese, bacon, and vegetables, and they're always a hit.

Ingredients
1/2 cup almond flour
1/4 cup coconut flour
1/4 cup flaxseed meal
1 teaspoon baking powder
1/4 teaspoon salt
2 eggs
1/4 cup milk of choice
1 tablespoon olive oil
Instructions
Preheat air fryer to 375 degrees F (190 degrees C).
In a large bowl, combine the almond flour, coconut flour, flaxseed meal, baking powder, and salt.
In a separate bowl, whisk together the eggs and milk.
Add the wet ingredients to the dry ingredients and mix until just combined.
Form the dough into 6-8 egg rolls.
Brush the egg rolls with olive oil and place them in the air fryer.
Cook for 10-12 minutes, or until golden brown and cooked through.
Serve immediately with your favorite fillings.
Why It Works
The combination of almond flour, coconut flour, and flaxseed meal creates a dough that's both crispy and fluffy.
The olive oil helps to keep the egg rolls from sticking to the air fryer basket.
Cooking the egg rolls at a high temperature helps them to cook quickly and evenly.
