Crustless Chili and Cheese Pie

The Crustless Chili and Cheese Pie was born out of necessity. I was craving chili and cheese, but I didn't have any cornbread to make it with. So I decided to try making it without a crust. It turned out so well that I've been making it ever since.

Ingredients
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can chili beans, rinsed and drained
  • 1 (15 ounce) can diced tomatoes
  • 1 (10 ounce) can tomato soup
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, brown ground beef over medium heat. Drain off excess fat.
  3. Add onion, green pepper, and red pepper to the skillet and cook until softened.
  4. Stir in chili beans, diced tomatoes, tomato soup, chili powder, and cumin.
  5. Bring to a simmer and cook for 15 minutes, or until heated through.
  6. Pour the chili mixture into a 9x13 inch baking dish.
  7. Top with shredded cheese of your choice.
  8. Bake for 15 minutes, or until the cheese is melted and bubbly.
