  • 1 bunch dandelion greens, chopped
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1/2 cup red onion, chopped
  • 1/2 cup celery, chopped
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 1/4 cup feta cheese (optional)
  • 1/4 cup olive oil
Instructions
  1. In a large bowl, combine the dandelion greens, chickpeas, red onion, celery, walnuts, cranberries, and feta cheese (if using).
  2. Drizzle with olive oil and toss to coat.
