These tacos were born out of a need for a quick and easy breakfast that was also low in carbs. I’m a big fan of the keto diet, but I find that many of the breakfast options can be time-consuming or unsatisfying. These tacos are the perfect solution: they’re quick to make, they’re packed with protein and healthy fats, and they’re absolutely delicious.

Ingredients
12 low-carb tortillas
12 large eggs
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup shredded cheddar cheese
1/4 cup chopped cilantro
Salt and pepper to taste
Your favorite salsa or hot sauce
Instructions
Preheat your air fryer to 350°F (175°C).
In a large bowl, whisk together the eggs, onion, bell pepper, cheddar cheese, cilantro, salt and pepper.
Pour 1/4 cup of the egg mixture into the center of each tortilla.
Fold the tortillas in half and place them in the air fryer basket.
Cook for 5-7 minutes, or until the eggs are set and the tortillas are golden brown.
Serve immediately with your favorite salsa or hot sauce.
