Easy Keto Breakfast Tacos
Less than 2 grams net carbs per taco, these air-fryer tacos are the perfect way to start your day on the keto diet. They’re made with low-carb tortillas, eggs, cheese, and your favorite salsa, and they’re ready in just 10 minutes.
These tacos were born out of a need for a quick and easy breakfast that was also low in carbs. I’m a big fan of the keto diet, but I find that many of the breakfast options can be time-consuming or unsatisfying. These tacos are the perfect solution: they’re quick to make, they’re packed with protein and healthy fats, and they’re absolutely delicious.

Ingredients
  • 12 low-carb tortillas
  • 12 large eggs
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Your favorite salsa or hot sauce
Instructions
  1. Preheat your air fryer to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, onion, bell pepper, cheddar cheese, cilantro, salt and pepper.
  3. Pour 1/4 cup of the egg mixture into the center of each tortilla.
  4. Fold the tortillas in half and place them in the air fryer basket.
  5. Cook for 5-7 minutes, or until the eggs are set and the tortillas are golden brown.
  6. Serve immediately with your favorite salsa or hot sauce.
